The larger rock salt crystals take more time to dissolve, which allows for gradual cooling of the ice cream. This effectively freezes the mixture to create a delightful ice cream.

The larger rock salt crystals take more time to dissolve, which allows for gradual cooling of the ice cream. This effectively freezes the mixture to create a delightful ice cream. Tips for Freezing Ice Cream: Follow manufacturer's instructions for assembling ice cream maker. Pour prepared ice cream mixture into ice cream maker's canister and place canister- into machine. Surround canister with several inches of crushed ice followed by Morton Ice Cream Salt using a ratio of 1 part Morton Ice Cream Salt to 8 parts crushed ice. Continue this layering process until the canister is covered. With the dasher inserted into the ice cream maker per the manufacturer's instructions, turn the crank of the hand freezer slowly, then faster as the mixture begins to freeze. The ice cream is frozen when the crank becomes difficult to turn. Refer to your ice cream maker manual for I the specific freezing recommendations of your model.
