Organic Green Kale. Popular as a side dish in Southern cooking, kale is a member of the cabbage family and has dark green, wrinkled leaves. It is prized as much for its hardiness as its intense flavor and is one of the most highly nutritious vegetables, with powerful antioxidant properties. It is very high in beta carotene, vitamin K, vitamin A, vitamin C, lutein and zeaxanthin. Remove and discard the tough center stalks before cooking. Washed kale can be kept in the refrigerator, wrapped in moist paper towels, for up to a week.
