Directions

Make 3 Quarts: 4-5 lb apples (Suggested Apples: Fuji, McIntosh, Jonagold, Rome, Cameo, Jonathon, Red Delicious, Honeycrisp, Pink Lady. Look for flavorful, aromatic and firm apples and always use a mixture in your filling), peaches or pears; 3 cups sugar; 3 cups water or apple juice; 1 pouch Mrs. Wages Fruit Pie Filling Mix. Prepare home canning jars and lids according to manufacturer's instructions for sterilized jars. Keep jars hot before filling. To prepare fruit, peel, core and slice 4-5 lb apples to yield about 3 lb sliced. Blanch prepared apples slices in hot water (200 degrees F) for 1 minute. Drain and keep in covered pot. Reserve juice for sauce. Can also use peaches or pears. To make sauce, whisk together 3 cups sugar, 3 cups water/apple juice and 1 pouch Mrs. Wages Fruit Pie Filling Mix. Stir constantly over medium heat (180 degrees F) until thickened. Remove from heat. Add prepared fruit and stir to coat. To process (Processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude), carefully ladle apple mixture into hot jars. Pack tightly leaving 1/2 inch headspace. Remove air bubbles; wipe rim, cap and process pints for 15 minutes, quarts for 20 minutes. Cool overnight. Finished product can be used immediately, prepared as a dessert and frozen, or stored ambient canned. Prepared pie filling can be used for pies, tarts, spiced cakes, crisps, cobblers and other desserts.
