Quick Pumpkin Bread


Delicious and moist bread. Good for lunch boxes and anytime snacks!

Ingredients

1-3/4 Cup all-purpose flour1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1-1/3 cup sugar
1/3 cup shortening
2 large eggs
1 cup canned pumpkin
1/3 cup milk
1/2 teaspoon vanilla extract
1/2 cup pecans, coarsely chopped (optional)
1/3 cup raisins or chopped dates (optional)

Directions

	Step 1: Preheat oven to 350. Sift together flour, baking powder, salt, baking soda, cinnamon, and cloves in a small bowl.

	Step 2: In a large bowl beat together the shortening and sugar until light and fluffy. Add the eggs, one at a time, mixing until they are just combined. Add the pumpkin and mix until just combined. Add the vanilla to the milk.

	Step 3: Add the sifted dry ingredients in 3 parts, alternating with the milk. Make sure to scrape the bowl between each addition. Do not over mix.

	Step 4: Fold in the nuts, raisins and dates. Pour into a greased 9-in. x 5-in. loaf pan and bake for 1 hour or until a toothpick inserted in a the center comes out clean.
