Sausage Skillet Pasta


This skillet dinner has it all- sausage, vegetables and pasta blended in an easy meal.

SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 25 Minutes

Ingredients

1 tsp. olive oil
1 medium onion, chopped
1 Pkg. Chicken Sausage - cut into slices
2 cups chicken broth
8 ounces penne pasta
2 cups chopped baby spinach, packed
1/2 cup grape tomatoes, sliced in half
1/2 cup shredded Parmesan cheese

Directions

	Step 1: In a large skillet over medium heat, saut� onions and olive oil until tender. Add sausage slices and continue cooking 5 to 8 minutes until the onions start to lightly brown.

	Step 2: Stir in the chicken broth and pasta, making sure the pasta is submerged. Raise the heat and bring mixture to a boil, then cover and turn heat down to medium low. Simmer 12 to 15 minutes stirring a few times during cooking time until the pasta is cooked.

	Step 3: Turn off heat, then uncover skillet. Add the tomatoes and spinach, stirring to wilt the leaves. Sprinkle with shredded Parmesan, and replace lid until cheese has melted - 5 minutes.
