This satisfying hot-dish combines all the flavors of a chicken Caesar salad.
SERVES: 12
PREP TIME: 15 Minutes
COOK TIME: 30 Minutes
Ingredients

1 pkg (16 oz) penne pasta
1/3 cup coarsely chopped onion
1/4 cup coarsely chopped green bell pepper
3 to 4 (20 oz) Gold'n Plump Boneless Chicken Chicken Breasts
1 bottle (16 oz) creamy Caesar dressing
1 cup chicken broth
2 cups mozzarella cheese in 1-inch cubes
1-1/2 cups Caesar-seasoned bread croutons, crushed
1/4 cup freshly grated Parmesan cheese

Directions
Step 1  Step 1:
Preheat oven to 350 degrees. Lightly oil a 13" x 9" baking pan.
 
Step 2  Step 2:
Cook penne according to package instructions.
 
Step 3  Step 3:
Meanwhile, pour water into a medium sautee pan to a level of about 1-1/2 inches deep. Stir in onion, bell pepper, and salt. Bring water to a boil over high heat. Add chicken (it should be covered by about 1/2 inch water) and reduce heat to medium Cover and cook for 8 to minutes or until just cooked through. Drain and discard cooking liquid and vegetables. Transfer the chicken to a plate to cool. When cool enough to handle, cut into 1-inch pieces.

When penne is done, drain well. Return to the same pan. Stir in dressing, chicken broth, mozzarella, and cooked chicken.
 
Step 5  Step 5:
Pour chicken mixture into the prepared baking pan.
 
Step 6  Step 5:
Bake for 25 minutes. Top with crushed croutons and sprinkle with Parmesan cheese. Bake fro 5 to 10 minutes more or until croutons are golden brown and center of casserole is hot.
