This easy soup is not only satisfying on a cold winter day, but it also makes the house smell great. Washing and dicing the vegetables the night before will save time in the morning. Don't salt the soup until ready to serve since the ham hock is pretty salty to begin with.
SERVES: 6
PREP TIME: 20 Minutes
COOK TIME: 360 Minutes
Ingredients

1 ham hock, split, well-scrubbed and trimmed of any visible fat -
Coborn's recommended ingredient is:
1 cup diced ham
- OR -
A ham bone from a larger ham you served as a main dish.
1 pound split peas
1 medium onion, cut into 1/4-inch dice
4 medium carrots, cut into 1/4-inch dice
3 ribs celery, cut into 1/4-inch dice
8 cups water
Salt and pepper to taste

Directions
Step 1  To assemble::
Place ham hock, peas, onion, carrots, celery and thyme into crockpot. Add water. Stir well.
 
Step 2  To cook::
Cover and cook on high heat for 6 hours or until vegetables are tender and meat is falling off bone.
 
Step 3  To serve::
Remove ham hock from soup. Shred meat from bone. Stir chunks of meat back into soup before serving. Check seasoning and add salt and pepper to taste, if necessary. Serve with crusty bread.
 
Step 4  Tips::
Crockpot cooking can be adapted to your lifestyle. If you want a dish to cook faster, add boiling liquid at the beginning. To slow down the cooking time, add cold liquid at the beginning. You can play with temperatures. Two hours on low equals approximately 1 hour on high.

To convert your own recipes for the slow cooker, use about half the recommended amount of liquid, since liquids don't evaporate in the crockpot as they do on the stove top.

Trim excess fat from meat before cooking. Fat melts during the long cooking and adds an unpleasant, greasy texture to the finished dish.
