Sweet Pea and Mint Soup


A handful of fresh mint complements sweet green peas in this easy recipe. Make the soup with vegetable broth and try serving it chilled in glasses as an elegant hors d'oeuvre.

Ingredients

2 tablespoons unsalted butter
1 yellow onion, chopped
2 cups low-sodium chicken or vegetable broth
2 10-ounce packages (4 cups) frozen peas, thawed
3/4 cup loosely packed mint leaves
1 teaspoon sugar
Kosher salt

Directions

	Step 1: Melt the butter in a saucepan over medium heat.

	Step 2: Add the onion and cook, stirring occasionally, until soft, 5 to 6 minutes. Add the broth and bring to a boil.

	Step 3: Place the peas, mint, sugar, and 1 teaspoon salt in a blender. Add 1/2 cup of the hot broth and puree until smooth.

	Step 4: Transfer the pureed peas and mint back to the saucepan and cook, stirring, until heated through.
