Twice Grilled Corn w/Lime Butter and Chili Powder


The corn is grilled not once - but twice and spread with chili lime butter and sprinkled with chili powder.

SERVES: 6
PREP TIME: 30 Minutes
COOK TIME: 30 Minutes

Ingredients

6 Corn on the Cob
1 stick Butter
Zest from one Lime
juice from one Lime
Chili Powder, to taste

Directions

	Step 1: Remove silks from the corn and leave the husks on. Soak in cold water for 30 minutes. Heat indoor or outdoor grill to high. Remove corn from water and place on the grill. Close cover and grill until just cooked through, about 20 minutes.

	Step 2: While the corn is grilling, prepare the Lime Butter. Melt the butter in a small sauce pan add the juice and zest from the limes.

	Step 3: Take the corn off the grill, peel back the husks. Tie the husks in a knot so you can hold on to it like a handle. Brush the corn with the lime butter and return it to the hot grill. Grill just until the corn browns slightly on all sides. Remove the corn, brush again with the lime butter. Sprinkle to taste with the Chili Powder. Place on a large platter and serve immediately.
